Hello! I tried reading as much of the documentation on this as I could, but couldn’t find a clear answer. Thanks in advance for the help!

To answer your question: yes, all data transfers with the Notecard do count towards the 500 MB you start with, including Notecard and host MCU firmware updates.

Is there a recommended way to estimate the transport overhead associated with the firmware updates to help create a somewhat accurate project of the total lifetime of the device before it hits the 500 MB cap?
