I am using a Notecarrier XS with a Starnote u.FL and Notecard Cellular for moving/tracking applications where occasionally we might be out of cell connection. Since they both have GPS u.FL connections, is there a preferred one to use, or do I have to use both? My understanding (based on other posts: Lon, lat not included in starnote note) is that the Starnote needs its GPS fix to find an accurate location unless it is in “fixed coordinates” mode, and so the Starnote GPS is the default and the Notecard Cellular doesn’t need a GPS antenna? However, if the system does have a strong cellular connection and doesn’t need to fall back to the Starnote, how does it get the GPS coords? Is the Notecard at risk of being damaged in anyway if no GPS antenna is connected?

The simplest path is to use antennas on both GPS u.FL connectors on the Notecard and Starnote. However there is some nuance that I can add:
By default Starnote will use its own GPS/GNSS unless you override that behavior with the ntn.gps API.
Same with Notecard, it will use its own GPS/GNSS unless you set it up to use Starnote as an external GPS module.
Is the Notecard at risk of being damaged in anyway if no GPS antenna is connected?
Definitely not. Totally fine leaving it disconnected if you are using Starnote as your GPS.
